Terminate the lease any time and get the current period's fee refunded, no questions asked.

Leased animals are clearly tagged everywhere you'd look for them - the animal screen, the info box, and the in-game Animals overview - and every lease payment shows up on your finance sheet under "Livestock Leasing" so you always know what your herd is costing you.
